A Lunch or Dinner Meal Prep
Alright, y’all! I’m back with another meal prep post, and this is one of my absolute FAVORITES. I didn’t even realize I liked Greek food until about a year or two ago. I started eating Tazikis or Zoe’s when we made our trips to Nashville, and now I crave it so often! We meal prep these Greek Chicken Bowls 1-2 times per month for our weekly lunches, and I can never get home fast enough to eat it during my lunch break. I wouldn’t say this is our FASTEST lunch meal prep since there are several different items you have to make, but it’s definitely our tastiest! It’s also pretty inexpensive – I spent around $30 dollars for all of the ingredients aside from the items I keep on hand (olive oil, garlic, spices, etc.) so that’s only about $3.00 per portion! Greek Chicken Meal Prep Bowls -
This meal is SO fresh and SO good. It’s low-cal but high in protein, which helps keep us full until dinnertime! I originally got this recipe from Eazy Peazy Meals, but I changed several things to make it more health-conscious!

Prep Time: 45 minutes || Cook Time: ~ 15 minutes || Total Time: < 1 hour || Servings: 10

Calories (per serving): 250 Calories || Protein: 29 grams || Fat: 5.5 grams || Carbs: 23 grams


Greek Chicken Meal Prep Bowls Ingredients -
  • Chicken Marinade
    • 2 lbs Boneless, Skinless Chicken Tenderloins
    • 2 Tbsp Extra Virgin Olive Oil
    • 2 Tbsp Minced Garlic
    • 1/4 Cup Fresh Lemon Juice
    • 2 tsp Red Wine Vinegar
    • 1/3 Cup Plain Greek Yogurt
    • Kosher Salt and Black Pepper (to taste)
  • Tzatziki Sauce
    • 1 cup Plain Greek Yogurt
    • 1 English Cucumber (diced)
    • 1 Tbsp Minced Garlic
    • 1 tsp Dill Weed
    • 1 tsp Fresh Lemon Juice
    • 1 tsp Lemon Zest
    • Kosher Salt and Black Pepper (to taste)
  • Cucumber Salad
    • 1 English Cucumber (sliced thin and then cut into 4’s)
    • 1/4 Cup Fresh Lemon Juice
    • 1/2 Tbsp Extra Virgin Olive Oil
    • 1 Tbsp Red Wine Vinegar
    • 1/2 Tbsp Minced Garlic
    • 1 tsp Dried Oregano
  • Other Items
    • 2 Bags Uncle Ben’s Ready Rice – Original
    • Red Onion (cut into slices)
    • Cherry Tomatoes (halved)


  1. Add all chicken marinade ingredients into a gallon sized ziploc bag. Massage, then add the chicken. Massage again.
  2. Let marinate for at least half an hour, however, we’ve found that the longer it marinates the better!
  3. Prepare your 10 meal prep containers on your counter – we love THESE!
  4. Cook the Ready Rice in the microwave for 90 seconds. Once both bags are cooked, portion out 50 grams of rice into each container.
  5. Add however many cherry tomato and onion slices you’d like to the bowl.
  6. Drain the chicken from the marinade (discard all excess). In a skillet, cook the chicken over medium-high heat until cooked through (about 4 minutes on each side). Remove from pan and let cool.
  7. While the chicken is cooling, you can make the cucumber salad. Ensure the cucumbers are sliced and cut into 4’s. Toss in a bowl with all other ingredients listed above. Set aside.
  8. Make the tzatziki by combining all ingredients listed above and stirring. Set aside.
  9. Assemble the rest of your bowl by portioning out chicken, cucumber salad, and tzatziki into each container.
    • I like to separate my cold items from my hot items, so I put the chicken and rice on one side of my container, and then I put the tomatoes, onion, cucumber salad, and tzatziki on the other side.
  10. Refrigerate for the week! I heat my rice and chicken up for about 35 seconds and then top it with all of my cold ingredients!
