GREEK CHICKEN BOWLS

THE INGREDIENTS

- Chicken Marinade
- 2 lbs Boneless, Skinless Chicken Tenderloins
- 2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp Minced Garlic
- 1/4 Cup Fresh Lemon Juice
- 2 tsp Red Wine Vinegar
- 1/3 Cup Plain Greek Yogurt
- Kosher Salt and Black Pepper (to taste)
- Tzatziki Sauce
- 1 cup Plain Greek Yogurt
- 1 English Cucumber (diced)
- 1 Tbsp Minced Garlic
- 1 tsp Dill Weed
- 1 tsp Fresh Lemon Juice
- 1 tsp Lemon Zest
- Kosher Salt and Black Pepper (to taste)
- Cucumber Salad
- 1 English Cucumber (sliced thin and then cut into 4’s)
- 1/4 Cup Fresh Lemon Juice
- 1/2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Red Wine Vinegar
- 1/2 Tbsp Minced Garlic
- 1 tsp Dried Oregano
- Other Items
- 2 Bags Uncle Ben’s Ready Rice – Original
- Red Onion (cut into slices)
- Cherry Tomatoes (halved)
INSTRUCTIONS
- Add all chicken marinade ingredients into a gallon sized ziploc bag. Massage, then add the chicken. Massage again.
- Let marinate for at least half an hour, however, we’ve found that the longer it marinates the better!
- Prepare your 10 meal prep containers on your counter – we love THESE!
- Cook the Ready Rice in the microwave for 90 seconds. Once both bags are cooked, portion out 50 grams of rice into each container.
- Add however many cherry tomato and onion slices you’d like to the bowl.
- Drain the chicken from the marinade (discard all excess). In a skillet, cook the chicken over medium-high heat until cooked through (about 4 minutes on each side). Remove from pan and let cool.
- While the chicken is cooling, you can make the cucumber salad. Ensure the cucumbers are sliced and cut into 4’s. Toss in a bowl with all other ingredients listed above. Set aside.
- Make the tzatziki by combining all ingredients listed above and stirring. Set aside.
- Assemble the rest of your bowl by portioning out chicken, cucumber salad, and tzatziki into each container.
- I like to separate my cold items from my hot items, so I put the chicken and rice on one side of my container, and then I put the tomatoes, onion, cucumber salad, and tzatziki on the other side.
- Refrigerate for the week! I heat my rice and chicken up for about 35 seconds and then top it with all of my cold ingredients!
